Organic Waste Diversion Challenges: 7 Problems Denver Businesses Hit in the First 90 Days

Setting up composting is easy. Keeping it working past month two is the real challenge, and the failure modes are remarkably consistent across every kind of business.

These are the seven problems that show up most often, and what fixes each one.

Contamination is the number one reason Denver organics programs fail, and it is almost always a placement or signage problem rather than a staff problem.


The short answer: Contamination, bad container placement, undersized capacity, staff turnover, compostable packaging confusion, odor and pests, and no feedback loop. Six of the seven are design problems, not behavior problems.

1. Contamination, the most common organic waste diversion challenge

The dominant failure mode. Plastic film, gloves, produce stickers, poly lined coffee cups, and bags end up in organics. Enough of it and the facility rejects the load. You pay disposal plus the failed trip, and your diversion for the month goes to zero.

The fix: Stop treating this as a discipline issue. Contamination is overwhelmingly caused by the container being in the wrong place, signage being unreadable at arm's length, or the sorting rule being genuinely ambiguous. Fix those three and contamination usually drops by more than half without a single conversation about compliance.

2. Container placement that fights the workflow

The compost container ends up wherever there was space, which is usually not where the food waste is generated. This is the most fixable of the organic waste diversion challenges on this list, and the most commonly overlooked. If a prep cook has to turn and walk six feet to compost carrot tops, but the trash can is directly under the cutting board, the carrot tops go in the trash. Every time. Under a Friday rush, every time and faster. The fix: Walk the kitchen during service, not during a quiet morning. Put collection where organics are produced, at the prep station and the dish pit. Two small containers in the right places beat one large container in the wrong place. Worth knowing: interior containers your staff empty into a centralized collection point do not count toward your weekly service capacity figure. Put them wherever they work operationally. Your compliance capacity is calculated on what the hauler actually services.

3. Undersized capacity

The container is full by Wednesday. Staff start putting food waste in the trash because there is nowhere else for it to go, and now you have a compliance problem and a behavior problem that will outlast the container fix.

The fix: Overshoot slightly at setup and right size down after 60 days of real data. Much easier to reduce service than to rebuild sorting habits after they break.

4. Staff turnover

You train the team in September. By March, half are new and nobody trained them. The program degrades gradually and nobody notices until a load gets rejected.

The fix: Put sorting into onboarding rather than into a one time training event. A laminated page in the new hire packet and five minutes on the first shift is enough. The failure is not that training is hard, it is that it is a one time event in most operations. URCO expects education records anyway, so building it into onboarding solves two problems at once.

5. Compostable packaging confusion

The most legitimately confusing problem in the category, and staff are not wrong to be uncertain.

Here is the Denver answer. A1 Organics, the primary commercial destination in the metro, accepts food scraps and yard trimmings only. Compostable serviceware is not accepted regardless of certification. Three gallon CMA certified bags are the only permitted liner.

That means the compostable cups and clamshells you bought specifically because they were compostable are contamination in your compost container. This surprises almost everyone.

The fix: Write your signage to the facility spec and only the facility spec. If your facility takes food scraps and soiled paper, the sign should say food scraps and soiled paper. Not compostables. Vagueness is what generates contamination.

6. Odor and pests

Food waste smells, especially in summer, and Denver enclosures are frequently tight, shaded, and poorly ventilated. Odor complaints from neighbors or residents are one of the fastest ways to lose internal support for a program.

URCO also requires containers, including dumpsters and compactors, to be cleaned often enough to prevent insects and rodents.

The fix: Increase frequency in summer even if volume does not justify it. Use permitted liners. Set a cleaning schedule for the container itself and hold to it. Keep lids closed, since most of the odor problem is an open lid problem.

7. No feedback loop

The program runs, nobody measures anything, and there is no signal when it drifts. By the time someone notices, six months of habits have set.

The fix: Monthly logging. Capacity in gallons, weight tickets, contamination flags, and a note on anything that changed. Takes minutes to review, turns an invisible process into a managed one, and it is the documentation you need at license renewal anyway.

The pattern underneath

Six of these seven are design problems. Placement, sizing, signage clarity, onboarding structure, frequency, and measurement are decisions someone makes once and then lives with.

Which is good news. A program that is failing can usually be fixed in an afternoon of walking the site, without asking anyone to try harder.
